A favorite ingredient in Mediterranean-style cooking! The large, spreading, bushy plants bear 6 to 12 glossy, purple fruits per plant over a long season. Low in calories, only 20 per cup. Packet will plant approximately a 30 foot row.
Plant seeds 1/4 inch deep. Seed germination in 10 to 12 days. Start seed indoors in warm, sunny location 8-10 weeks before transplanting outdoors. Wait 3 weeks after last frost to transplant outside. Space plants 18 inches apart in rows 36 inches apart.

Or in warmer climates, sow directly in garden. Note: Eggplants requires full sun and rich, fertile, well-drained soil. 85 days to harvest from transplanting. You can tell eggplant is ripe by its glossy purple look. Harvest fruits while still shiny and about the size of your fist. Cut from the stem with a knife.

This is truly one of the finest vegetables for crisp, delicious salads. The thick, buttery leaves are tender and have a distinctive flavor. The solid cluster of inner leaves blanches to creamy white. Packet will plant approximately a 39 foot row.
Plant seeds 1/4 inch deep. Seed germination in 12 to 15 days. Sow directly in garden as early as soil can be made fine and loose. Cool weather vegetable. Plant seeds every 2 inches, covering lightly with soil.

Thin plants to 12 inches apart when they are 3 inches tall. Use thinnings in fresh salads. 100 days to harvest from transplanting. Endive needs plenty of moisture. Fall crops can withstand light frost. Blanch when half-grown to avoid overly strong taste.

Allium cepa. The juicy, sweet onion from the famous eastern Washington valley can now be grown in your garden. Bulbs are large, slightly flattened globes with yellow skin and pale yellow flesh. "Walla Walla," the onion so nice they named it twice... or something like that. Plant seeds in a well-drained location a
month before the last frost. Seed may be started indoors 8 to 10 weeks earlier. Harden off seedlings by putting them outside during the day for one week before transplanting.

Before planting, enrich the soil with fertilizer and rotted manure. Keep well watered. Begin thinning when seedlings are 3 inches tall. Control weeds with shallow hoeing. Fertilize three times at 10-day intervals with a high-nitrogen, low-sulfur fertilizer once bulbs start to form. Use thinnings like scallions in salads. After most of the tops have fallen over, pull up the plants and let them cure in the sun for a few days. Once cured, cut off the tops 1 1/2 inches above the bulb. Best when used within a few weeks of harvest. 120 days to harvest after spring planting, 300 days to harvest after late-summer planting.
